Senigallia is today one of Italy's most celebrated food destinations: on the same stretch of coast work two absolute icons of Italian fine dining. Uliassi, with its three Michelin stars, is an international benchmark for its ability to tell the story of the Adriatic through contemporary cuisine built on research, technique and deep respect for the raw ingredient. A few kilometres away, in the hamlet of Marzocca, Madonnina del Pescatoretwo Michelin stars — carries the signature of Moreno Cedroni, the chef who turned fish into a creative, innovative language and pushed Marche cuisine towards new frontiers.

Uliassi sits right on the town's seafront: the dining room and terrace look out over the Adriatic, the same sea that supplies the kitchen's ingredients every day. It's Mauro Uliassi's restaurant, which since the 1990s has put Senigallia on the international fine-dining map, culminating in a third star in 2019. Madonnina del Pescatore is instead in Marzocca, a few minutes' drive from the centre: here Moreno Cedroni pioneered an experimental fish cuisine that has inspired a generation of Italian chefs.
